Kafta and Potatoes Recipe

  • 2 lb. lean pastured Ground Beef

  • 1 Yellow Onion, peeled and finely chopped

  • 1 bunch organic Parsley, finely chopped

  • 1 tsp. Sea Salt

  • 1 tsp. Allspice 

  • ½ tsp. Cinnamon 

  • ½ tsp. Black Pepper

  • 1 lb. medium size Potatoes, peeled and sliced into ½ inch thick rounds

  • 1 ½ c. organic Tomato Juice

  • 1/3 c. Ghee or organic Butter

    1.  Preheat oven to 350 ℉.

    2.  Place meat, onions, parsley and seasoning in food processor and pulse just until incorporated. You may also do this by hand, making sure to mix very well. Transfer to a bowl.

    3.  Using a 10 x 13 inch baking pan, spread the Kafta mixture evenly, pressing down to smooth surface. Place potatoes in rows over meat.

    4. Place tomato juice in a bowl and season with a little salt and pepper. Add the melted ghee. Mix and pour over the potatoes and meat.

  • 5. Cover with foil and bake for about 45 minutes, then uncover and continue to bake until potatoes are lightly browned. Serve.
