Kafta and Potatoes Recipe
2 lb. lean pastured Ground Beef
1 Yellow Onion, peeled and finely chopped
1 bunch organic Parsley, finely chopped
1 tsp. Sea Salt
1 tsp. Allspice
½ tsp. Cinnamon
½ tsp. Black Pepper
1 lb. medium size Potatoes, peeled and sliced into ½ inch thick rounds
1 ½ c. organic Tomato Juice
1/3 c. Ghee or organic Butter
1. Preheat oven to 350 ℉.2. Place meat, onions, parsley and seasoning in food processor and pulse just until incorporated. You may also do this by hand, making sure to mix very well. Transfer to a bowl.
3. Using a 10 x 13 inch baking pan, spread the Kafta mixture evenly, pressing down to smooth surface. Place potatoes in rows over meat.
4. Place tomato juice in a bowl and season with a little salt and pepper. Add the melted ghee. Mix and pour over the potatoes and meat.
5. Cover with foil and bake for about 45 minutes, then uncover and continue to bake until potatoes are lightly browned. Serve.
This delightful dessert is quite sweet and is therefore served in small squares. You’ll bake the dough 1 day ahead of serving.
